Chicken Broth and the Wealth of Nations

It struck me as I was cooking dinner Sunday: We are fortunate enough to live in a society where we are rich enough that we can render chickens down to broth, which is then used to flavor the rice (or mashed potatoes, or other starch) that we serve as tasty side dishes for our main courses.

We are a rich enough society that we don't have to eat their feet, their heads and their butts.

1. Well, we do, but it's more for pleasure.

(I've had chicken feet -- too much effort, not enough payoff.)

2. Just wait for my screed railing against the potable water we waste waiting for the water to heat up, which is actually just thinly-veiled pining for a tankless water heater. -- Joe
